Millet fruit bar is a result of the modification carried out on Pure fruit bars (100% dried fruits), which is a product of HPW Fresh and Dry Limited, Eastern region, Ghana.
In order to reduce cost of production and to make the product affordable for an average consumer, millet fruit bar was developed (20% millet: 80% dried fruits) to close that gap.
The project focused on the analysis of percent crude fat, carbohydrate, crude protein, ash and crude fiber content of the new food product.
The level of some minerals [Ca, K, Na, Zn, Fe] present in the food product was determined, as well as the presence or absence of selected microorganisms.

Oluwaseun Ogunlade obtained her B.Sc degree in Food Science and Technology from KNUST, Ghana and She's currently doing her national service in Nestle Water factory, Agbara, Nigeria, where she works with the Total Performance Management team.
She's 23 years old.
