The main objective of this thesis is to build up simple, an accurate and fast method for the determination of fat and protein content in milk samples.

Based on the laser scattering theory, the ratio of the scattered to transmitted light intensity is considered as an essential optical parameter characterizing the fat and protein contents inside the selected milk samples.

We implemented the ratio of the scattered to transmitted light intensity, as the principal analysis parameter for this thesis, to minimize the power fluctuation of the light source.

The primary significance of applying this method is to enhance the accuracy of determining the intended components inside the milk samples.

This method can easily be applied in diary industries, which sell their products on the basis of fat and protein contents, because of its simple methodology, cost effective and economic importance.
