A large amount of saffron by-products (leaves, petals, whole flowers, stamens, styles and corms) with little or no commercial value are wasted when processing the stigmas.
For this reason, the valorization of saffron by-products is considered as an environmental and economic stake for the Moroccan producers which can be a material supplement for the population.
The objective of this review is to succeed in the study and the proposal of ways of valorization of the bio-residues of the saffron culture for a sustainable development of this sector.The objective of this review is to succeed in the study and the proposal of ways of valorization of the saffron by-products for a sustainable development of the saffron sector and the contribution to the international scientific knowledge in this field.In this sense, the main objectives of the present study are:- To valorize saffron by-products and to highlight its richness, by a phytochemical study;- To evaluate the antioxidant, antifungal, antibacterial, insecticidal and anti-mite potential of the phenolic extracts of Crocus sativus by-products.
